Spinach Deviled Eggs
- 1 dozen egg, hard cooked and peeled
- 12 cup frozen chopped spinach, thawed and drained, squeezed dry
- 14 cup mayonnaise (I use low-fat)
- 14 cup bacon, slices cooked and crumbled
- 2 tablespoons cider vinegar
- 1 teaspoon sugar
- 12 teaspoon salt
- 12 teaspoon black pepper
- Cut eggs in half lengthwise, scoop out yolk and mash with a fork.
- Add remaining ingredients and mix well.
- Spoon spinach mixture into egg halves.
- Chill until ready to serve (about 2 hours to overnight to let the flavors blend.
