Hot Cocoa
- 1/2 cup sugar
- 1/4 cup plus 1 tablespoon unsweetened cocoa
- 13 cup hot water
- 4 cups skim milk
- 3/4 teaspoon vanilla extract (see note)
- Combine sugar and cocoa in a medium-size saucepan; blend in hot water.
- Cook over medium heat, stirring constantly, until mixture boils.
- Allow mixture to boil 2 minutes, stirring constantly.
- Add milk and heat to serving temperature (do not boil).
- Remove from heat and add vanilla extract.
