Healthy Nachos

  1. Preheat your ovens broiler on low setting.
  2. In a small bowl, mash the black bean patty until it is chunky and looks a little like meat.
  3. Add the black beans, pepper, onion, garlic, lemon zest, salt and pepper and mix until well combined.
  4. Set aside.
  5. Lay out your chips on a parchment lined baking sheet.
  6. Evenly sprinkle the meat mixture over the chips.
  7. Sprinkle your cheese of choice on top.
  8. Broil on low for 2-3 minutes, until the nachos are warm and the cheese has melted.
  9. Remove from the oven and top with tomatoes, avocado, greens and more chopped peppers.
  10. Serve with hot sauce, vegan sour cream and/or your favorite salsa!
