Healthy Nachos
- 1 whole Chipotle Flavored Bean Burger Patty, Thawed (We Use MorningStar Farms Chipotle Bean Veggie Burgers)
- 1/2 cups Canned (Drained) Black Beans
- 13 cups Diced Orange, Yellow Or Red Pepper Plus Extra For Garnish If Desired
- 1/4 cups Diced Onion
- 1/2 teaspoons Garlic Powder
- 1/2 teaspoons Lemon Zest
- 1/2 teaspoons Salt And Pepper
- 2- 1/2 cups Organic Tortilla Chips Of Choice
- 1/2 cups Non-dairy Cheese
- 1 whole Large Tomato, Diced
- 1 whole Large Avocado, Peeled, Pitted And Diced
- 1 cup Fresh Dark Leafy Greens
- Preheat your ovens broiler on low setting.
- In a small bowl, mash the black bean patty until it is chunky and looks a little like meat.
- Add the black beans, pepper, onion, garlic, lemon zest, salt and pepper and mix until well combined.
- Set aside.
- Lay out your chips on a parchment lined baking sheet.
- Evenly sprinkle the meat mixture over the chips.
- Sprinkle your cheese of choice on top.
- Broil on low for 2-3 minutes, until the nachos are warm and the cheese has melted.
- Remove from the oven and top with tomatoes, avocado, greens and more chopped peppers.
- Serve with hot sauce, vegan sour cream and/or your favorite salsa!
