Coconut Curry Salmon
- 2 Tablespoons Walnut Oil
- 13 tablespoons, 1- 1/2 teaspoons, 1- 1/4 pinches Coconut Milk
- 1 teaspoon Curry Powder
- 1/2 teaspoons Salt
- 2 Salmon Fillets
- Heat the walnut oil in a pan on medium heat.
- When the oil is hot, add in the coconut milk.
- When the coconut milk starts simmering, stir in the curry powder and the salt.
- Place the salmon fillets in the pan and spoon the coconut milk on top.
- Cover the pan with a lid and let it sit for 10 minutes or so on medium low heat.
- Serve the salmon by spooning the sauce on top and garnishing with a tiny pinch of curry powder.
