minestrone

  1. heat oil in a heavy sauce pot
  2. add garlic first then all veggies except diced tomatoes
  3. sweat the veggies for about 10 minutes
  4. add tomatoes oregano and veg.
  5. stock .
  6. bring to a boil and reduce to a simmer for about an hour and a half
  7. mean while cook the pasta and rinse with cold water ( mix a little oil to prevent sticking )
  8. taste your soup and adjust the flavour
  9. place a small portion of pasta in a soup bowl and fill the rest with your delicious soup
  10. garnish with shaved parmesan and devour :)
