Bacon & Cheese Corn Muffins
- 1-1/4 cups flour
- 3/4 cup cornmeal
- 2 Tbsp. sugar
- 1 Tbsp. Magic Baking Powder
- 3/4 tsp. salt
- 1/2 tsp. baking soda
- 1 egg
- 1-1/4 cups buttermilk
- 1/3 cup oil
- 1-1/4 cups Cracker Barrel Shredded Old Cheddar Cheese
- 1/2 cup Oscar Mayer Real Bacon Bits
- 2 green onions, chopped
- Heat oven to 400 degrees F.
- Combine first 6 ingredients in large bowl.
- Whisk egg, buttermilk and oil in medium bowl until blended; stir in cheese, bacon and onions.
- Add egg mixture to dry ingredients; stir just until moistened.
- Spoon into 12 muffin cups sprayed with cooking spray.
- Bake 18 to 20 min.
- or until toothpick inserted in centres comes out clean.
- Cool in pan 10 min.
- before removing from pan to serve.
