Gourmet Spinach Sandwich
- 4 pieces whole wheat bread
- 2 tablespoons olive oil
- course salt and pepper
- 1 white onion
- 1 cup sliced mushrooms
- 3 cups fresh spinach, leafs
- 4 teaspoons mayonnaise
- 4 teaspoons Dijon mustard
- 2 slices swiss cheese
- Slice onion end to end to make thick circles.
- Then cut the circles in half through the middle.
- Saute onions in olive oil over medium heat for about 3 minutes before adding the mushrooms.
- Sprinkle with the course salt and pepper.
- When the onions are translucent, add the spinach.
- The spinach will cook down.
- When they start to wilt, add more salt and pepper.
- When the spinach is completely wilted, take off the stove.
- Meanwhile, toast the bread in a toaster oven.
- Spread the mayo and the mustard on the toasted bread slices before adding the slice of swiss cheese.
- Top bread with the onion mixture and serve hot.
