Gourmet Spinach Sandwich

  1. Slice onion end to end to make thick circles.
  2. Then cut the circles in half through the middle.
  3. Saute onions in olive oil over medium heat for about 3 minutes before adding the mushrooms.
  4. Sprinkle with the course salt and pepper.
  5. When the onions are translucent, add the spinach.
  6. The spinach will cook down.
  7. When they start to wilt, add more salt and pepper.
  8. When the spinach is completely wilted, take off the stove.
  9. Meanwhile, toast the bread in a toaster oven.
  10. Spread the mayo and the mustard on the toasted bread slices before adding the slice of swiss cheese.
  11. Top bread with the onion mixture and serve hot.
