Cracked Wheat Salad
- 1/2 cup fine bulgur wheat
- 1-1/2 cups chicken broth, heated to boil
- 1 small onion, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 bunch fresh parsley, finely chopped (about 3/4 cup)
- 1/4 cup fresh mint, finely chopped
- 3 Tbsp. PLANTERS Peanut Oil
- 3 Tbsp. lemon juice
- 1/8 tsp. ground black pepper
- 4 lettuce leaves
- Mix bulgur and broth in medium bowl.
- Let stand 30 min.
- ; drain well.
- Add onions, parsley and mint; mix well.
- Stir in oil, lemon juice and pepper.
- Cover.
- Refrigerate 2 hours or until ready to serve.
- Serve on lettuce-covered plates.
