Baked Hen

  1. Overnight place cleaned and dryer hen in 2 quarts of water brine with 1/4 cup salt pnd tablespoon of poultry seasoning.
  2. Next day rinse and pat dry rub with weber kickin chicken seasoning stuff cavity green pepper and onion quarted
  3. Place on oven rack in 9/11 backing pan or roaster and bake at 375 at 15- 20 min per pound about 2 hours for 5 lb hen
  4. Remove from oven ( use Broth for flavorful dressing or stuffing) let rest 10 min and serve
