Strawberry Jam

  1. Wash berries.
  2. Slice in half lengthwise or quarter large berries.
  3. Measure 4 cups (950 ml) into large saucepan.
  4. Add 1 cup (225 ml) sugar; mix carefully.
  5. Let stand 15 minutes.
  6. Add remaining sugar; mix well.
  7. Bring to full rolling boil.
  8. Boil hard 1 minute, stirring constantly.
  9. Remove from heat and stir in pectin.
  10. Stir and skim alternately 5 minutes to prevent floating fruit.
  11. Ladle the jam into hot, scalded jars.
  12. Seal at once and process in hot water bath if not refrigerating for immediate use.
