Gumbo Chicken, Shrimp & Crab Recipe

  1. Rinse, shell and devein shrimp.
  2. In 8 qt Dutch oven, heat oil, butter; blend in flour; cook over low heat, stirring about 5 min till the flour mix (ROUX) turns a rich medium brown color.
  3. Add in onions, green pepper, green onions, celery, garlic, okra, chicken (cut-up), sausage (sliced).
  4. Stir till chicken is lightly browned, scraping the bottom; cook about 8 to 15 min over medium heat.
  5. Stir in 2 qts water-broth and tomato sauce.
  6. Add in salt, peppers, file pwdr, oregano, bay leaves.
  7. May need additional amounts added to taste.
  8. Simmer uncovered approximately 45 min, stirring occasionally.
  9. Add in additional file pwdr if needed.
  10. Add in shrimp, crab, stewed tomatoes.
  11. Cook about 15 min more.
  12. Ladle gumbo into soup bowls.
  13. Top with rice.
  14. Makes about 8 servings.
  15. Eat with saltine crackers.
