Herbed Corn Pudding Recipe

  1. Heat butter in skillet and remove 2 Tbsp.
  2. to small bowl.
  3. Saute/fry onion in skillet till golden brown; add in corn, pimiento, salt and pepper and combine.
  4. Pour into ungreased shallow baking dish.
  5. Stir stuffing mix with the reserved melted butter and sprinkle proportionately over the corn.
  6. With back of spoon, lightly press down into corn, about 1/4".
  7. Bake in 350 degree oven for about 20 min till browned and bubbly.
  8. Sprinkle with parsley.
