Herbed Corn Pudding Recipe
- 4 tbsp. butter, melted
- 1/2 c. chopped onion
- 1 (12 ounce.) can whole kernel yellow corn
- 1 (17 ounce.) can cream style yellow corn
- 1/4 c. minced pimiento (opt.)
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 1/2 c. packaged herb flavored stuffing mix (not crouton type)
- Chopped parsley for garnish
- Heat butter in skillet and remove 2 Tbsp.
- to small bowl.
- Saute/fry onion in skillet till golden brown; add in corn, pimiento, salt and pepper and combine.
- Pour into ungreased shallow baking dish.
- Stir stuffing mix with the reserved melted butter and sprinkle proportionately over the corn.
- With back of spoon, lightly press down into corn, about 1/4".
- Bake in 350 degree oven for about 20 min till browned and bubbly.
- Sprinkle with parsley.
