Bing Cherry Fritters Recipe
- 2 c. All-Purpose Flour
- 1 Tbsp. Baking Pwdr
- 1/2 tsp Salt
- 2 Tbsp. Sugar
- 1 Tbsp. Cinnamon
- 1 1/3 c. Lowfat milk
- 4 x Large eggs, separated
- 1 Tbsp. Vegetable Oil
- 1 Tbsp. Fresh Lemon Juice
- 2 c. Bing Cherries, pitted Oil For Frying Sifted Pwdr Sugar
- In a large bowl, sift together the flour, baking pwdr, salt, sugar, and cinnamon.
- Add in the lowfat milk, egg yolks, oil, and lemon juice and beat till smooth.
- In a large bowl, whip the egg whites till soft peaks form, then gently fold them into the batter.
- Mix in the pitted cherries.
- In a deep, heavy saucepan, heat 3 inches of oil to 375F degrees.
- Drop a few tablespoonfuls of the batter into the warm oil and fry for 3-5 min, or possibly till golden.
- Drain on paper towels and keep hot in a very low oven.
- Repeat till all the batter is cooked.
- Serve at once, topped with powdered sugar.
