Chicken and Roasted Red Pepper Skewers

  1. Thread 2 to 3 chicken pieces evenly onto each skewer.
  2. Place in shallow dish.
  3. Mix mayo, red peppers and garlic until well blended.
  4. Pour over skewers; cover.
  5. Refrigerate at least 30 min.
  6. to marinate.
  7. Remove skewers from marinade; discard marinade.
  8. Grill chicken skewers on well-oiled gril over medium-high heat 8 to 10 min.
  9. or until chicken is cooked through (165F), turning skewers over after 5 min.
  10. Serve warm.
