Lamb Gyro Meatballs
- 1/2 pounds Ground Lamb
- 1 clove Garlic, Minced
- 1 Tablespoon Red Wine Vinegar
- 3/4 teaspoons Oregano
- 1/2 teaspoons Onion Powder
- 1/2 teaspoons Kosher Salt
- 1/4 teaspoons Pepper
- 1 Tablespoon Olive Oil
- 1/4 cups Onion
- 1/4 cups Tomatoes
- 1/4 cups Cucumber
- 1 container Tzatziki Sauce, 16 Ounces
- Mix together lamb, ground garlic, vinegar, oregano, onion powder, salt, and pepper.
- Roll together into approximately 1 inch diameter meatballs.
- Heat 1 tablespoon oil in a skillet, add meatballs to the pan.
- Brown the meatballs and make sure they are cooked through and remove from heat.
- Dice onion, tomato, and cucumber.
- Combine the meatballs and vegetables to be eaten as a salad or in a pita.
- Top with tzatziki sauce.
- I buy a small tub at a local grocery store; however, Im sure homemade tzatziki would taste even better.
- To make these even healthier, the meatballs could also be baked in the oven.
