Uncle Ed's Blackberry Flapjacks
- 2 cups all-purpose flour
- 1/2 tsp. salt
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 4 tbsp. honey
- 2 tbsp. sugar
- 2 eggs, beaten
- 2 tbsp. butter, melted
- 2 cups mashed blackberries*
- 2 cups buttermilk
- Shake the blackberries and a little flour together in a paper bag.
- Beat together all the liquid fixin's (including blackberry juice).
- Sift together all the dry fixin's.
- Stir the blackberries into the liquid fixin's.
- Dump the dry fixin's into the liquid and stir just enough to wet all the flour and evenly distribute the berries.
- Pour about 1/4 cup of batter for each flapjack on a greased griddle or fryin' pan and turn over when bubbles show up on the top.
- Serve with honey and melted butter and fried ham.
