Five-Grain Fitness Waffles

  1. Preheat a waffle iron.
  2. In a bowl, whisk together the flours, wheat germ, baking powder, cardamom, baking soda, and salt.
  3. In another bowl, beat the egg whites with an electric mixer until soft, glossy peaks form.
  4. In another bowl, beat or whisk together the egg yolks, buttermilk, oil, and honey.
  5. Add the buttermilk mixture to the dry ingredients and mix just until combined.
  6. Fold in the egg whites.
  7. Spoon or pour about 1 cup batter onto the hot iron.
  8. Close the lid.
  9. Bake until the waffle is golden brown, about 4 minutes.
  10. Remove with a fork to a warm plate.
  11. Serve at once or keep warm on a baking sheet in a 200F oven.
  12. Repeat with the remaining batter.
  13. Top with maple syrup, Blueberry Sauce, or Swiss Whipped Honey Butter.
