Harvest Apple Salad
- 1 Granny Smith apples, cored and thinly sliced (skin on)
- 1 lemon, juice of
- 13 cup cider vinegar
- 13 cup honey
- 1 teaspoon cinnamon
- 14 cup olive oil
- 8 cups salad greens (arugula, red leaf lettuce, or romaine)
- 12 cup chopped dried apricot
- 12 cup crumbled blue cheese
- 12 cup pistachio nut
- Cover apple slices with cold water.
- Add lemon juice.
- Let stand until ready to serve.
- Mix vinegar, honey and cinnamon in small bowl with wire whisk.
- Gradually add oil, whisking until well blended.
- To serve, divide greens among 8 plates.
- Top each with drained apple slices, apricots, cheese, and pistachio nuts.
- Serve dressing on the side.
