Blueberry Coffee Cake
- 2 34 cups flour
- 1 14 cups sugar
- 1 tablespoon molasses
- 1 teaspoon cinnamon
- 34 teaspoon nutmeg
- 12 teaspoon clove
- 12 teaspoon allspice
- 1 cup margarine
- 1 14 cups soymilk
- 14 teaspoon salt
- 3 teaspoons baking powder
- 34 cup blueberries
- Sift together first seven ingredients, then cut in margarine.
- Set aside 1 cup of mixture for topping.
- Add last four ingredients.
- Beat with a whisk, then pour into lightly oiled and floured 8 x 8" pan.
- Sprinkle with topping.
- Bake at 350 for 40-45 minutes, or until knife comes out clean.
