Rich Chocolate Pudding
- 13 cup packed brown sugar
- 14 cup unsweetened cocoa powder
- 3 tablespoons cornstarch
- 1 teaspoon instant espresso powder (optional)
- 18 teaspoon ground cinnamon
- 1 pinch salt
- 2 cups 1% low-fat milk, divided
- 1 large egg
- 2 ounces bittersweet chocolate chips (about 1/3 cup)
- 1 12 teaspoons vanilla extract
- Whisk sugar, cocoa, cornstarch, espresso powder (if using), cinnamon, salt, and 1/2 cup of the milk in medium saucepan.
- Pour remaining milk into sugar mixture while whisking.
- Bring to a simmer over medium-low heat.
- Simmer, whisking constantly, until slightly thickened, about 2-3 minutes.
- Beat egg lightly in small bowl.
- Pour in 1 cup of the hot milk mixture while whisking.
- Pour egg mixture back into pan.
- Cook over medium-low heat, stirring, 2 minutes.
- Remove pan from heat.
- Add chocolate.
- Whisk until mixture is smooth.
- Stir in vanilla extract.
- Pour mixture into 4 serving dishes.
- Chill 2 hours or overnight, covered.
