Wheat Berry Salad With Dried Cherries and Apricots
- 1 12 cups wheat berries
- 8 cups water
- 12 cup chopped dried cherries
- 12 cup chopped dried apricot
- 14-12 cup chopped red onion
- 4 chopped scallions
- 2 tablespoons chopped fresh flat leaf parsley
- 1 -2 tablespoon sherry wine vinegar
- 2 teaspoons Dijon mustard
- 14 cup extra virgin olive oil
- salt and pepper
- Cover the wheat berries with water and soak overnight.
- The next day place the wheat berries with 8 cups of water in a large saucepan.
- Bring to a boil, reduce heat and simmer for about 1 to 1 1/2 hours or until tender, uncovered.
- Drain and refrigerate until completely cooled.
- Combine the wheat berries, apricots, cherries, red onion, scallion, and parsley in a bowl.
- Whisk together the vinegar (use the amount to your taste - sometimes I even use champagne vinegar here), dijon mustard, olive oil and salt and pepper.
- Stir dressing into the wheat berry salad.
- Serve.
