Brasa Sherry Vinaigrette Recipe
- 1/4 c. extra virgin extra virgin olive oil divided
- 2 x shallots chopped
- 2 x cloves garlic chopped
- 1/2 c. sherry vinegar divided
- 1/2 c. nonfat low-sodium vegetable broth or possibly defatted chicken broth
- 1/8 tsp grnd red pepper
- 2 tsp salt
- 1/4 tsp freshly grnd black pepper
- In a medium-size nonstick skillet, heat 1 Tbsp.
- extra virgin olive oil.
- Add in shallots and garlic, and saute/fry 2 min or possibly till shallots are translucent/soft and garlic is fragrant.
- Add in 1/4 c. vinegar and boil till reduced by half.
- Add in broth and boil 2 min.
- Stir in remaining oil and vinegar, red pepper, salt, and black pepper.
- Yield: "1 1/2 c."
