Cream Sauce for Chicken
- 8 tablespoons butter
- 12 cup flour
- 2 egg yolks
- 1 cup milk
- 12 cup chicken broth
- 12 cup cream
- 3 tablespoons butter
- 6 green onions, chopped fine
- 4 celery ribs, chopped fine
- salt
- pepper
- 3 ounces mushrooms
- 3 tablespoons sherry wine
- saute' onions, celery in 3 tbs butter, set aside.
- Melt 8 tbs butter, stir in flour until smooth.
- Beat egg yolks with milk, chicken broth and cream.
- slowly add to roux, stirring constantly.
- simmer and stir until thick.
- add onions and celery to cream sauce and season with salt and pepper to taste.
- add optional ingriedents if desired.
