Chicken Curry
- 8 oz. sour cream
- 1 Tbsp. curry powder
- 1 tsp. salt
- 1 tsp. coriander
- 1 tsp. minced ginger
- 4 cloves minced garlic
- 1/2 tsp. ground pepper
- 1/2 tsp. lemon juice
- 8 skinned chicken thighs
- 2 Tbsp. shortening
- 2 bay leaves
- 1 medium onion, chopped
- 1 large tomato, peeled and chopped
- 8 oz. mushrooms (optional)
- Mix together first eight ingredients.
- Marinate chicken in mixture for at least 30 minutes, but preferably a few hours. Refrigerate.
- Cook onion in shortening until it begins to color. If using mushrooms, add at this time and tomato and bay leaves. Cook 5 minutes.
- Add chicken and marinade and mix together.
- Cover and simmer for 30 minutes.
- Serves 4.
