Chicken Curry

  1. Mix together first eight ingredients.
  2. Marinate chicken in mixture for at least 30 minutes, but preferably a few hours. Refrigerate.
  3. Cook onion in shortening until it begins to color. If using mushrooms, add at this time and tomato and bay leaves. Cook 5 minutes.
  4. Add chicken and marinade and mix together.
  5. Cover and simmer for 30 minutes.
  6. Serves 4.
