Peanut Butter Granola Bars - A.k.a. Frodo Bars
- 4 cups quick-cooking oats
- 2 cups nuts or 2 cups raisins or 2 cups dried fruit or 2 cups coconut or 1 small candy, (I like 1 cup sliced almonds and 1 cup dried cranberries myself.)
- 1 cup natural-style peanut butter
- 1 cup corn syrup
- 1 teaspoon vanilla
- In a large bowl, stir together the quick oats and flavourings.
- In a small bowl, stir together natural peanut butter and corn syrup and vanilla.
- Don't substitute regular peanut butter, it is too soft and the granola bars will fall apart.
- Don't substitute maple syrup or pancake syrup, they are not sticky enough and the granola bars will crumble.
- Once the wet ingredients are evenly mixed together, pour the wet ingredients into the dry ingredients, and mix well.
- You might need to use your hands, like with chocolate chip cookie dough.
- Line a baking sheet with waxed paper.
- Dump the granola mixture onto the waxed paper, and spread out with your hands.
- Press firmly into shape.
- Flatten and compress with a rolling pin.
- Slice into individual bars.
