Cream of Carrot Soup

  1. Add olive oil to a medium hot medium pot.
  2. Add onions and salt.
  3. Saute until clear, not brown, ~ 5 minutes or less.
  4. Add garlic.
  5. Cook one minute.
  6. Add cumin and pepper.
  7. Add chicken stock and carrots and bring to a boil.
  8. Simmer, covered, until carrots are tender.
  9. Remove from heat.
  10. Transfer soup to blender.
  11. Add sour cream and lime juice.
  12. Blend until smooth.
  13. Serve hot or cold, accompanied with lime.
