Pork Chops with Balsamic Braised Cabbage

  1. Heat oven to 400 degrees F. Heat 1 tablespoon oil in a large skillet over medium-high heat.
  2. Season the pork with 1/2 teaspoon salt and 1/4 teaspoon pepper, and cook until browned, 2 to 3 minutes per side.
  3. Transfer to a rimmed baking sheet and roast until just cooked through, 5 to 6 minutes.
  4. Meanwhile, wipe out the skillet and heat the remaining 2 tablespoons oil over medium heat.
  5. Add the onion and cook, covered, stirring occasionally, for 5 minutes.
  6. Add the cabbage, vinegar, 2 tablespoons water, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook, covered, stirring occasionally, until the cabbage is just tender, 5 to 6 minutes.
  7. Fold in the parsley and serve with the pork chops and potatoes, if desired.
