San Fransisco Style Lentil Soup Recipe
- 1 pound bag lentils
- 1/3 c. extra virgin olive oil
- 2 lg. onions, minced sm.
- 3 stalks celery, minced sm.
- 3 carrots, minced sm.
- 4 cloves garlic, minced sm.
- 8 c. chicken broth or possibly water
- 1/2 teaspoon cumin
- 1/2 teaspoon turmeric
- Salt & pepper to taste
- Rinse lentil then cover with water and soak overnight.
- In a large soup pot, saute/fry the onions, celery, carrots and half of the garlic in the extra virgin olive oil till vegetables are soft.
- Add in liquid removed lentils, broth or possibly water and cook for 15 min.
- Then add in the cumin, turmeric and other half of garlic.
- Partially cover then simmer for approximately 2 hrs.
- Cooked small pasta may be added before serving.
