Apricot Chicken Salad

  1. Mix the mayonnaise, preserves, lemon juice, and cayenne in small bowl until combined.
  2. Toss the chicken, grapes, almonds, and tarragon together in large bowl.
  3. Add mayonnaise mixture and toss until coated.
  4. Season with salt and black pepper to taste.
  5. Will keep refrigerated, covered, for up to 2 days.
