Havregryns Konfect ( Oatmeal Confection)
- 400 g rolled oats or 400 g oatmeal
- 250 g sugar
- 125 g butter
- 65 ml fresh cream
- 2 tablespoons cocoa
- 12 teaspoon almond essence
- Grind the oats to fine flour (we have normally done this in a meat mincer), melt the butter over very gentle heat or in the microwave oven at low setting.
- (do not brown) add the ground oat meal, sugar, almond essence, cream and cocoa, mix well and place in fridge to cool.
- When cold roll into balls about 16 mm diameter and coat with sugar.
- Store in fridge.
