Lou Gehrig Chicken

  1. Prepare the chicken -- grill it, roast it, saute it -- however you prefer.
  2. Season with parsley, thyme, oregano, salt, pepper.
  3. Chop it into bite size chunks.
  4. Saute the thickly sliced portabellas, add spinach and cook until just wilted.
  5. Set this aside and make the sauce.
  6. Sauce: In large saucepan combine cream cheese, Parmesan, butter, and milk, stirring constantly until smooth.
  7. Meanwhile, prepare the pasta according to the instructions on the box.
  8. Add chicken, spinach, and portabellas to the sauce, serve over the pasta.
