Black Bean and Avocado Salad

  1. Add avocados to a bowl.
  2. Squeeze lime juice over and very gently stir.
  3. Add tomato, black beans, onion, cilantro, pepper, salt and 1/4 cup queso fresco.
  4. Stir very carefully to avoid mashing up avocados; leave them chunky.
  5. Sprinkle remaining queso fresco on top.
  6. Serve immediately.
