Black Bean and Avocado Salad
- 2 whole Avocados, Diced
- 1/2 Lime, Juiced
- 1 whole Medium Tomato
- 13 cups Rinsed And Drained Black Beans
- 1/4 cups Chopped Yellow Onion
- 1/4 cups Chopped Cilantro
- 1/4 teaspoons White Pepper
- 1/4 teaspoons Garlic Salt
- 13 cups Queso Fresco, Divided
- Add avocados to a bowl.
- Squeeze lime juice over and very gently stir.
- Add tomato, black beans, onion, cilantro, pepper, salt and 1/4 cup queso fresco.
- Stir very carefully to avoid mashing up avocados; leave them chunky.
- Sprinkle remaining queso fresco on top.
- Serve immediately.
