West Coast Chicken Recipe
- 2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 c. frzn orange juice concentrate, thawed
- 1/2 teaspoon grnd ginger
- 4 teaspoon soy sauce
- Vegetable oil for greasing pan
- 5 lbs. chicken thighs, skinned
- Combine salt, pepper, orange juice concentrate, butter, ginger and soy sauce.
- Grease 2 (11"x7") baking pans well with vegetable oil.
- Place chicken in single layer in the pans.
- Baste well with sauce.
- Cover and chill overnight.
- Bake, uncovered at 350 degrees for 60 min, basting with sauce once during cooking.
- 8 (4 ounce.)
