Southwest white chicken chili
- 1 tbsp olive oil
- 4 skinless chicken breast (cut into cubes)
- 4 tsp chili powder
- 1 tsp cayenne pepper
- 1 large onion, chopped
- 1 medium green pepper, chopped
- 1 large can cream of chicken or celery soup
- 1 1/2 cans water
- 1 1/2 cups frozen corn
- 2 large cans great northern beans
- Cook chicken, chili powder, cayenne pepper, onion, green pepper in oil.
- Cook until chicken is done and onion, green pepper are tender.
- Add soup, corn and beans.
- Add water as needed.
- Simmer 1 hour on stove
- Serve with shredded cheese and tortilla chips (Sour cream optional)
