Green Soup Or Kale Soup Recipe
- 6 c. water
- 1 pound potatoes, peeled and cut into quarters
- 1/2 pound kale, washed, stripped form their stems and finely shredded
- 1/4 pound chourico
- 4 tbsp. extra virgin olive oil
- 1 lg. onion, peeled and cut into quarters
- 1/4 freshly grnd black pepper
- Salt to taste
- Prepare the kale and put aside.
- In a large pot bring water to a boil, add in potatoes, onions and salt.
- Boil over moderate heat till potatoes are soft sufficient to mash.
- Remove the pot from the stove, mash the potatoes and onions right in the pan or possibly if you prefer, transfer them to a bowl, and mash with a potato masher or possibly fork to smooth puree.
- Return soup mix to a moderate heat and stir in 3 Tbsp.
- of extra virgin olive oil.
- Add in pepper and bring to a boil.
- Add in kale and simmer uncovered for 4 to 5 min over the same moderate heat or possibly till kale is tender.
- Stir in the remaining Tbsp.
- of extra virgin olive oil and taste for seasoning.
