Simmered Beef and Burdock Root
- 200 grams Beef
- 1 Burdock root
- 1 piece Ginger
- 130 ml Cooking sake
- 30 ml Soy sauce
- 30 ml Mirin
- 2 tsp Sugar
- Cut the burdock into thin strips and the meat into bite-sized pieces.
- Heat the broth ingredients in a saucepan.
- As the broth begins to simmer, add julienned ginger.
- As soon as the pot comes to a boil, add the beef and burdock.
- Reduce to medium heat and cover the saucepan while boiling.
- As the broth boils away, scoop up the flavor from the bottom and mix well.
- Boil until the stock has evaporated.
- Added 11/21/2010 - The burdock can be cut into thin diagonal strips, or sliced with a peeler.
- Try to cut it the same thickness as the beef.
