Simmered Beef and Burdock Root

  1. Cut the burdock into thin strips and the meat into bite-sized pieces.
  2. Heat the broth ingredients in a saucepan.
  3. As the broth begins to simmer, add julienned ginger.
  4. As soon as the pot comes to a boil, add the beef and burdock.
  5. Reduce to medium heat and cover the saucepan while boiling.
  6. As the broth boils away, scoop up the flavor from the bottom and mix well.
  7. Boil until the stock has evaporated.
  8. Added 11/21/2010 - The burdock can be cut into thin diagonal strips, or sliced with a peeler.
  9. Try to cut it the same thickness as the beef.
