Lemon Chicken
- 1-1/2 tbsp. salad oil
- 1 chicken, cut up
- 2 lemon
- 1 can (10 oz.) tomato juice
- 1/4 cup lemon juice
- 1-1/2 tsp. sugar
- 1 md. onion, sliced
- 1-1/2 tbsp. Worcestershire sauce
- 1/4 cup ketchup
- 1-1/2 tsp. prepared mustard
- 1/4 tsp. pepper
- 1 tsp. salt
- Heat oven to 350F.
- Heat oil in frying pan and brown chicken.
- Place in shallow baking dish in single layer, meaty side up.
- Sprinkle with grated lemon rind.
- Heat remaining ingredients, stirring to blend.
- Pour over chicken.
- Bake one hour or until tender, uncovered, basting often.
