Velveeta Tex-Mex Beef and Potatoes

  1. Heat oven to 350.
  2. Brown meat with peppers and onions in a large skillet; drain.
  3. Return to skillet.
  4. Stir in taco mix and water.
  5. Add potatoes, corn and velveeta; mix well.
  6. Spoon into 9x13-inch baking dish; cover.
  7. Bake 20 minutes; stir.
  8. Bake, uncovered, 15 minutes or until heated through.
