Squash Relish With Peppers

  1. In a large bowl, combine the first 6 ingredients.
  2. Cover and refrigerate overnight.
  3. Drain vegetable mixture.
  4. Rinse in cold water and drain again.
  5. Place vegetables in a Dutch oven.
  6. Add both sugars, vinegar, celery seed, tumeric, and mustard.
  7. Bring to a boil.
  8. Reduce heat.
  9. Simmer, uncovered, for 15 to 20 minutes or until liquid is clear.
  10. Remove from the heat.
  11. Cool.
  12. Spoon into containers.
  13. Cover and refrigerate for up to 3 weeks.
