Watermelon Feta and Arugula Salad With Watermelon Vinaigrette
- 2 small jalapenos, stem and seeds removed
- 2 tablespoons red currant jelly
- 1 cup diced watermelon
- 2 tablespoons white wine vinegar
- 14 teaspoon garlic pepper seasoning
- 18 teaspoon salt
- 1 teaspoon olive oil
- 6 cups torn mixed salad greens, such as arugula
- 3 cups cubed seeded watermelon
- 1 tomatoes, cut into chunks
- 12 cup sliced red onion
- 13 cup crumbled feta cheese
- freshly cracked black pepper
- Make vinaigrette:.
- In a food processor, combine the jalapeno, red currant jelly, watermelon, vinegar, garlic pepper, and salt.
- Process until smooth.
- With the machine still running, drizzle in the olive oil.
- Store in the refrigerator until ready to use.
- Shake well before using.
- To Serve:.
- In a large, bowl, toss the lettuce with a bit of the dressing.
- Mound in the center of a large flat serving dish.
- Surround with watermelon, tomatoes and onions.
- Crumble feta cheese over the salad.
- Serve with remainder of dressing on the side.
- Garnish with freshly cracked black pepper.
