Barley Salad Recipe
- 1 box barley
- 1 lg. tomato
- 1 cucumber
- 1 green pepper
- 1 handful fresh parsley
- 1 handful green onion tops
- Salt and pepper to taste
- Oil and vinegar to taste
- 1 teaspoon oregano
- 1 teaspoon garlic pwdr
- Cook barley with salt as box says, about 45 min to 1 hour.
- Drain and rinse.
- Cut vegetables into small pcs.
- Mix all ingredients into barley.
- Mix well.
- Can be made 1 or possibly 2 days before you need it.
- Mix again and serve.
