Carrot Oat Breakfast Cookies

  1. Preheat oven to 375.
  2. In large bowl, combine dry ingredients.
  3. Stir in eggs, applesauce, honey and oil until just blended.
  4. Gently fold in carrots, raisins and walnuts.
  5. Drop batter by 2 tablespoons onto prepared baking sheets, spacing 2 inches apart.
  6. Bake in preheated oven for 12-15 minutes or until just set in the center.
