Low Fat Carrot Bars
- 4 eggs
- 1 cup sugar
- 1 cup sugar substitute
- 1 34 cups applesauce
- 12 cup water
- 12 teaspoon salt
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 cup white flour
- 1 cup wheat flour
- 3 cups grated carrots
- 2 tablespoons butter
- 3 ounces low-fat cream cheese, softened
- 1 teaspoon vanilla
- 1 34 cups powdered sugar
- Beat the eggs, add the sugar, applesauce, and water.
- Mix well.
- Add the salt, cinnamon, and flours.
- Mix well, add the carrots and mix well.
- Pour into a greased 10 x 15 pan.
- Bake at 350 degrees for 20-30 minutes, until a toothpick inserted in the middle comes out clean.
- Cool completely.
- Beat butter and cream cheese until smooth.
- Add remaining ingredients and mix well.
- Spread over the bars.
