Hobelchas Shaved With Apples & Chestnuts
- 3 Winesap apples, peeled and cored
- 2 cups red wine
- 3 tablespoons sugar
- 1 tablespoon plus 1 teaspoon salt
- 8 fresh chestnuts
- 24 thin slices Hobelchas
- 24 leaves parsley
- 24 thinly sliced Granny Smith apple (half-moon shapes)
- 24 thinly sliced Granny Smith apple (1 1/4-inch rounds)
- 16 celery leaves
- 8 teaspoons Red Wine Apple Puree
- Thinly slice the apples on a mandoline.
- Place the slices in a medium saucepan, cover with the red wine, and simmer over low heat until all the wine is evaporated, about 1 hour.
- Puree in a blender until completely smooth and season with the sugar and salt.
- Pass through a fine-mesh tamis and chill over ice.
