Chicken With Hoisin And Cashews Recipe
- 1 pound chicken
- 1 egg white
- 1 tbsp. sherry
- 1 tbsp. cornstarch
- 1/2 teaspoon salt
- 1 1/2 tbsp. chopped ginger
- 1 1/2 tbsp. chopped green onion
- 1 tbsp. chopped garlic
- 1/4 teaspoon red pepper flakes
- 6 tbsp. hoisin
- 4 teaspoon soy sauce
- 1 tbsp. sherry
- 1 each green, red, yellow pepper
- 1/2 c. cashews
- Cut chicken into 3/4 inch cubes.
- Marinate in egg white, sherry, cornstarch and salt for 4-24 hrs.
- Mix the ginger, green onion, garlic and pepper flakes together and put aside.
- Mix the hoisin, soy sauce and sherry together and put aside.
- Cut the peppers into cubes.
- Stir fry the peppers.
- Remove from wok.
- Stir fry the chicken till done.
- Remove from wok.
- Stir fry the ginger mix for 30 seconds, add in the hoisin mix.
- Add in back in the chicken and peppers.
- Cook for 1 minute.
- Mix in cashews.
- Serves 4-6.
- Hoisin can be purchased in specialty shops.
