Skinny Skillet Lasagna
- 8 ounces Italian turkey sausage
- 12 cup chopped onion (1 medium)
- 2 cups spaghetti sauce
- 1 cup water
- 2 cups lasagna noodles
- 1 12 cups zucchini
- 12 cup fat-free ricotta cheese
- 2 tablespoons parmesan cheese or 2 tablespoons romano cheese
- 1 tablespoon fresh parsley
- 12 cup reduced-fat mozzarella cheese
- Brown meat and onion in large skillet.
- Drain off excess fat.
- Add spaghetti sauce and water.
- Bring to boil.
- Add zucchini and noodles.
- Return to Boil.
- Reduce heat, cover, and simmer for 12 minutes until pasta is tender.
- Combine ricotta, Parmesan cheese, and parsley in a small bowl.
- Drop the cheese mixture into the skillet in five or six mounds.
- Top each mound with mozzarella.
- Cover for 5 to 6 minutes, or until heated through.
- Let stand ten minutes before serving.
