Skinny Skillet Lasagna

  1. Brown meat and onion in large skillet.
  2. Drain off excess fat.
  3. Add spaghetti sauce and water.
  4. Bring to boil.
  5. Add zucchini and noodles.
  6. Return to Boil.
  7. Reduce heat, cover, and simmer for 12 minutes until pasta is tender.
  8. Combine ricotta, Parmesan cheese, and parsley in a small bowl.
  9. Drop the cheese mixture into the skillet in five or six mounds.
  10. Top each mound with mozzarella.
  11. Cover for 5 to 6 minutes, or until heated through.
  12. Let stand ten minutes before serving.
