Salmon Loaf With Cucumber-Dill Sauce
- 1 (16 ounce) can salmon, drained and flaked
- 12 cup herb stuffing mix
- 12 cup mayonnaise
- 12 cup chopped onion
- 14 cup chopped celery
- 14 cup chopped green and red bell pepper (combination)
- 1 egg, beaten
- 12 teaspoon salt
- 1 teaspoon jerk rub
- 14 teaspoon ground red pepper
- 14 teaspoon white pepper
- 2 tablespoons lemon juice
- 12 cup sour cream
- 12 cup mayonnaise
- 12 cup finely chopped cucumber
- 2 tablespoons chopped onions
- 1 tablespoon fresh dill
- For salmon loaf:.
- Preheat oven to 350.
- In a medium mixing bowl, combine salmon, stuffing mix, mayonnaise, onion, celery, green and red bell peppers, egg, salt, jerk seasoning, red pepper and white pepper.
- Mix well.
- Shape into shallow 8*8 baking dish.
- Bake 40 minutes.
- For Sauce:.
- In a small bowl, combine lemon juice, sour cream, mayonnaise, cucumber, onion and dill.
- Mix well.
- Refrigerate until ready to serve with loaf.
