Simmered Pork Offal
- 200 grams Pork offal
- 1/2 Sake
- 1200 ml Dashi stock
- 1 knob Thinly sliced ginger
- 1 the green section of 2 stalks Japanese leek
- 10 cm Daikon radish
- 1/2 Carrot
- 1 Konnyaku
- 3 tbsp Miso
- 2 tbsp Soy sauce
- 2 tsp Mirin
- 1 Shichimi spice
- 1 Green onion or Japanese leek
- Boil the offal once, then dump out the water.
- Wash and cut the larger pieces into bite-sized pieces.
- Put Step 1 and the ingredients into a pot and turn on the heat.
- Once it comes to a boil, add the ingredients and simmer on low heat for 1 hour.
- Cut the daikon into 8 mm pieces, the carrot into 5 mm pieces.
- Cut the konnyaku into thin, rectangles and lightly boil to remove the astringent taste.
- Add Step 3 to the pot from Step 2 and simmer until the vegetables have become tender (about 20-30 minutes).
- Remove the Japanese leek and the ginger.
- Lastly, flavor with the miso, soy sauce, and mirin.
- Serve in a dish and garnish with shichimi spice and finely chopped green onion.
