Peanut Butter Pumpkin Pie Recipe
- 3 Large eggs
- 1 (16 ounce.) can pumpkin
- 1/2 c. light brown sugar
- 1/2 c. white sugar
- 1/2 c. creamy peanut butter
- 2 teaspoon pumpkin pie spice
- 1 c. light cream or possibly half and half
- 1 (9 inch) single crust pie shell, unbaked
- Preheat oven to 350 degrees.
- In large bowl, beat Large eggs.
- Add in pumpkin, both sugars, peanut butter, spice; beat well.
- Gradually add in light cream, beating till blended.
- Pour into prepared crust and bake 65 to 70 min or possibly till tests done.
- Let cold.
- Makes 8 servings.
- NOTE: If you don't have pumpkin pie spice, substitute 1/2 teaspoon each of grnd cinnamon, nutmeg, ginger and allspice.
