Bleu Cheese Pasta Recipe

  1. Prepare spaghetti according to package directions and drain.
  2. Mix Bleu cheese, chicken broth and butter.
  3. Cook, stirring frequently till thickened.
  4. Add in mushrooms, peas, onion, red pepper, lemon juice, salt and pepper.
  5. Cook till the vegetables are tender, about 5 min.
  6. Pour over spaghetti.
  7. Sprinkle with Parmesan cheese; toss to coat.
  8. Sprinkle with additional Bleu cheese, if you like.
  9. Garnish with capers.
  10. Makes 4 servings.
