Bleu Cheese Pasta Recipe
- 1 lb spaghetti
- 1 can chicken broth
- 1/4 c. butter
- 1/4 c. Bleu cheese, crumbled
- 8 ounce fresh mushrooms, sliced
- 2 c. frzn peas
- 1 jar roasted red peppers, cut in strips
- 3/4 c. onions, chopped
- 2 tsp lemon juice
- 1/4 tsp black pepper
- 1/4 c. grated Parmesan cheese
- Prepare spaghetti according to package directions and drain.
- Mix Bleu cheese, chicken broth and butter.
- Cook, stirring frequently till thickened.
- Add in mushrooms, peas, onion, red pepper, lemon juice, salt and pepper.
- Cook till the vegetables are tender, about 5 min.
- Pour over spaghetti.
- Sprinkle with Parmesan cheese; toss to coat.
- Sprinkle with additional Bleu cheese, if you like.
- Garnish with capers.
- Makes 4 servings.
